The highly regarded Flatz Restaurant and Lounge is an urban establishment located just miles from the foothills of the Rocky Mountains that emphasizes a ‘Food Forward' approach to each dish we serve. Quality ingredients, community partnerships, and a desire to provide excellent service drive our actions. In each decision we make, creating an intriguing experience with food is at the forefront of our mind.

Flatz Restaurant and Lounge, led by newly appointed Executive Chef John Percarpio, gives foresight to elevating local cuisine. We are passionate about finding quality ingredients that are sourced right here in the Rocky Mountains and to introduce our guests to the latest in wine, craft beers, and local spirits.

Chef John Percarpio

Chef John Percarpio joined the Flatz Team in April 2018. He is a well versed and experienced chef with a degree from the Culinary Institute of America in New York. He comes to us with a membership in the American Culinary Federation, the National Restaurant Association, and Court of Master Sommeliers. He has held multiple positions as Executive Chef of some of Colorado's most prestigious country clubs and was a culinary instructor at the Aguste Escoffier School of Culinary Arts for over 6 years. Chef John has studied and cooked in many different locales including Germany, Colorado, Washington State and Vermont. He likes to focus on the Classical side of the culinary arts and prides himself in butchering his own meats.
